Mocha Cupcakes

Whether you're seeking a delightful dessert for a special gathering or simply craving a decadent indulgence, these rich mocha cupcakes are sure to satisfy.

For the cupcakes:
210g all-purpose flour   |   200g granulated sugar   |   50g unsweetened cocoa powder   |   7.5g baking powder   |   2.5g baking soda   |   2.5g salt   |   2 large eggs   |   240ml whole milk   |   120ml vegetable oil   |   1-2 CafePod coffee pods to make a strong coffee of your choice   |   10g CafePod coffee grounds

For the frosting:
200g unsalted butter, softened   |   400g powdered sugar   |   1 espresso of CafePod coffee blend of your choice   |   1 teaspoon vanilla extract   |   A pinch of salt (optional)

8 Steps to a Delicious Treat

1. Preheat
Preheat oven to 175°C & line muffin tin with liners.

2. Cupcake Batter
Sift together flour, cocoa, baking powder, baking soda, coffee grounds & salt. Whisk eggs, milk & oil.

3. Mix the Batter
Mix the wet & dry ingredients until just combined.

4. Brew the Coffee
Make a strong cup of coffee & an espresso using the blends of your choice & let it cool.

5. Batter & Coffee In
Fill cupcake liners two-thirds full & add 2tsp cooled brewed coffee to batter & mix.

6. Bake
Bake at 175°C for 18-20 minutes & cool cupcakes in tin for 5 mins, transfer to a wire rack to cool completely.

7. Frosting Mix
Beat softened butter until smooth & gradually add powdered sugar, beating until fluffy. Mix in the cooled espresso, vanilla extract & pinch of salt. Beat frosting until smooth.

8. Frost, Garnish & Serve
Frost cooled cupcakes with coffee buttercream. Optionally garnish with chocolate shavings or cocoa powder & serve.
