Mocha Mousse Cheesecake

This decadent Mocha Mousse Cheesecake combines the rich flavours of chocolate and coffee in a smooth, creamy mousse layered over a classic cheesecake base. Perfect for any occasion, this recipe is sure to impress your family & friends!

For the crust:
CHOCOLATE DIGESTIVE BISCUITS (150G) | UNSALTED BUTTER, MELTED (70G)

For the cheesecake filling:
CREAM CHEESE, SOFTENED (500G) | GRANULATED SUGAR (150G) | LARGE EGGS (2) | VANILLA EXTRACT (1 TSP) | CAFEPOD COFFEE (1 POD BREWED & COOLED TO ROOM TEMPERATURE)

For the mocha mousse topping:
DARK CHOCOLATE, CHOPPED (200G) | HEAVY CREAM (240ML) | CAFEPOD COFFEE  (1 POD BREWED & COOLED TO ROOM TEMPERATURE) | ICING SUGAR (30G)

7 Steps to a Delicious Treat

1. Preheat Oven
Preheat your oven to 325°F (160°C).

2. Make the Crust
Using a food processor crush biscuits into fine crumbs, mix with melted butter, then press mixture into the base of a 9-inch springform pan. Bake for 10 minutes, then let it cool.

3. Prepare Filling
In a bowl beat cream cheese until smooth. Add sugar, eggs, vanilla extract & brewed coffee & mix. Pour the filling over the cooled crust.

4. Bake
Bake for 45-50 minutes. Cool, then refrigerate for at least 4 hours or overnight.

5. Make the Mousse
Melt chocolate & cool it slightly. In a separate bowl, whip cream with icing sugar until stiff peaks form. Fold brewed coffee into the chocolate, then fold it in the whipped cream until well combined.

6. Top Cheesecake
Once the cheesecake is thoroughly chilled, spread the mocha mousse topping evenly over the cheesecake.

7. Chill Again
Place the cheesecake back in the fridge and let it chill for an additional 2-3 hours & serve.

8. Frost, Garnish & Serve
Frost cooled cupcakes with coffee buttercream. Optionally garnish with chocolate shavings or cocoa powder & serve.
